Alaskan Smoked Salmon Dip with an Italian Twist

Appetizer: Serves 6


250 grams cream cheese

250 grams mascarpone

1 small red onion, chopped

¼ pound Alaskan smoked salmon, broken into small chunks

Capers (optional)

Italian Focaccia


  1. Blend together the cream cheese and mascarpone until smooth and creamy.
  2. Stir in chopped onion, salmon chunks and capers (if using).
  3. Serve with fresh focaccia bread, toasted bread or your favorite crackers.

* You can always make this recipe only using cream cheese, but my father found that the mascarpone gives the dip a wonderfully, creamy texture.  You can also add more salmon.
